Easy Cookie Dough Truffles

Easy Cookie Dough Truffles
- Total Time: 10 minutes
- Yield: 24 1x
Ingredients
2/3 cup cashew butter (or favorite nut butter)
1/4 cup coconut flour (+ 1–2 Tbs more, if needed)
2 Tbs pure maple syrup (or 12 drops of Sweet Leaf Vanilla Creme Stevia)
1 tsp vanilla
Pinch of Himalayan pink salt
3 oz bar of dark chocolate
2 tsp coconut oil
Instructions
* In a medium mixing bowl, stir together all ingredients (except the chocolate and coconut oil.)
* If your dough is too wet, add extra coconut flour. Optional: add 2-3 Tbs chocolate shavings or chips.
* Use a cookie scoop to make balls (1/2 Tbs to 1 1/2 Tbs size) Roll with your hands to smooth them out.
* In the microwave or a double boiler, melt 2 oz chocolate and coconut oil.
* Place each ball in the bowl melted chocolate and roll it around to coat.
* Use a fork to lift each truffle onto a parchment-lined plate. Drizzle extra chocolate on top if you want it pretty.
* Freeze for 20 minutes until firm. ENJOY!
