Pumpkin Chocolate Chip Butter Cookies
Pumpkin Chocolate Chip Cookies
3 cups oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 scoop vanilla protein
1 cup canned pumpkin
2 teaspoons vanilla extract
1/2 cup unsweetened applesauce
1/2 cup coconut sugar or stevia
1 TBSP coconut oil
1/3 cup Cacao chocolate chips
✔ Preheat oven to 350 degrees F. Spray cookie sheet with nonstick cooking spray.
✔ Make oat flour by throwing your oatmeal into blender or food processor until oatmeal resembles flour.
✔ Place protein powder, oat flour, baking powder, baking soda, salt and spices in a medium bowl to set aside.
✔ In a separate large bowl, whisk together pumpkin, just like brown sugar substitute, vanilla extract, oil, and applesauce for 1-2 minutes until everything is s smooth and creamy. Slowly add in oat flour mixture and mix until just combined.
✔ Add chocolate chips. Bake for 10-15 minutes (check often to make sure they don’t burn!) Once finished baking, cool 10 minutes to allow them to set up!
