Instant Pot Pomegranate Pulled Pork
This easy to prepare Pomegranate Pulled Pork can be made in the Instant Pot in under an hour. It is so tender and juicy your whole family will love it.

  • 2 tablespoons avocado oil
  • 1 large sliced onion
  • 1/4 teaspoon salt
  • 2 tablespoons garlic
  • salt and pepper to season roast
  • 5 to 6- pound pork roast
  • 2 cups Pom Wonderful 100% Pomegranate Juice -marinade
  • 1-2 cups  Pom Wonderful 100% Pomegranate Juice- for InstantPot
  • 1/2 Fresh Pomegranate
  1. Thow a 5-6-pound pork roast.
  1. Put pork roast into a glass container or ziplock bag.
  2. Pour 2 cups Pom Wonderful 100% Pomegranate Juice over pork roast in a  ziplock bag or glass container.
  3. Add salt, pepper, garlic, and place in the fridge for an hour up to 24 hours.
Cook time:
  1. After the roast is done marinating set the Instant Pot to saute.
  2. Add 2 tablespoons of avocado oil to the pot. Heat oil until it is hot.
  3. Add sliced onion, garlic, and a pinch of salt.
  4. Saute until the onions are almost translucent.
  5. Saute roast on all sides until it just begins to brown.
  6. Add the Pom Wonderful 100% Pomegranate Juice place the lid on the Instant Pot.
  7. Pressure cook for 55 minutes in the manual setting.
  8. Once the roast has finished cooking you can perform a quick release.
  9. Remove roast place on a serving dish.
  10. Take a fork and gently pull the pork apart.
  11. Add 1/2 pomegranate seeds on top.
  12. Serve and Enjoy!
Recipe Notes

Slow cooker directions In a large skillet add 2 tablespoons of avocado oil. Heat pan over medium heat. Add sliced onion, garlic, and a pinch of salt, saute onions until they are translucent. Move onions and garlic to the slow cooker. Season roast with salt and pepper, saute roast on all sides until brown. Transfer the roast to the slow cooker. Add Pom Wonderful 100% Pomegranate Juice to the slow cooker. Cook on low for 4 to 6 hours. Use a thermometer to verify pork is fully cooked. Pork should reach 145 degrees before consuming.
